WHAT MAKES OUR REUBENS SPECIAL?
In 2012, Glen Rinkowski and David Kessinger set out to master corned beef brisket for a St. Paddy’s Day street party. After an unappreciated salt-peter joke by the cautious pharmacist at Pickwick’s Pharmacy, they created a flavorful brine and allowed the brisket to marinate for 3 weeks. Once brined, the brisket was roasted with pickling spices, Guinness beer, oranges, onions, and garlic, and then served in individual Reuben sandwiches at the party. The overwhelming success of these sandwiches, along with years of St. Paddy’s Day traditions, made it clear that a Reuben had to be on the menu.
